2 pounds beef stew meat, cut into 1-inch cubes

1 cup beef broth

1 cup mushroom soup (cream of mushroom)

1 medium onion, diced

2 cloves garlic, minced

1 tablespoon Worcestershire sauce

1 tablespoon soy sauce

1 teaspoon dried thyme

1 teaspoon paprika

Salt and pepper to taste

2 tablespoons olive oil

2 tablespoons cornstarch (optional, for thickening)

2 tablespoons water (optional, for thickening)

Fresh parsley for garnish (optional)

Sear the Beef: In a large skillet, heat the olive oil over medium-high heat. Season the beef stew meat with salt and pepper, then add to the skillet. Sear the beef on all sides until browned (about 3-4 minutes per side). This step adds flavor!

    Prepare the Crock Pot: Transfer the seared beef to your crock pot. Add the diced onion, minced garlic, beef broth, mushroom soup, Worcestershire sauce, soy sauce, dried thyme, and paprika. Stir everything together.

      Cook Low and Slow: Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the beef is tender and the flavors have melded together.

        Thicken the Gravy (optional): If you prefer a thicker gravy, mix the cornstarch with water to create a slurry in a small bowl. About 30 minutes before serving, stir the slurry into the crock pot and let it cook on high for a thickening effect.

          Serve: Once cooked, taste and adjust seasoning if needed. Serve the beef tips and gravy over cooked rice, mashed potatoes, or egg noodles for a hearty meal. Garnish with fresh parsley if desired.
