Crispy St. Patrick's Day Cabbage Fritters with Garlic Sauce

4 cups green cabbage, finely shredded

1 cup all-purpose flour

1/2 cup grated Parmesan cheese

1/2 cup breadcrumbs (preferably panko for extra crunch)

2 large eggs

1 teaspoon baking powder

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon salt

1/2 teaspoon black pepper

1/4 teaspoon cayenne pepper (optional for heat)

1/4 cup fresh parsley, finely chopped

Vegetable oil for frying

Garlic Sauce Ingredients:

1/2 cup mayonnaise

2 cloves garlic, minced

1 tablespoon lemon juice

Salt and pepper to taste

Instructions
 

In a large mixing bowl, combine the finely shredded cabbage with salt. Let it sit for about 10 minutes to draw out excess moisture. After 10 minutes, squeeze the cabbage to remove as much liquid as possible and place it in a clean bowl.

    In a separate bowl, whisk together the eggs. Add the grated Parmesan cheese, flour, breadcrumbs, baking powder, garlic powder, onion powder, black pepper, cayenne pepper (if using), and chopped parsley. Mix until well combined.

      Fold the squeezed cabbage into the egg and flour mixture until evenly incorporated. The mixture should be thick but manageable enough to form patties.

        Heat about 1/4 inch of vegetable oil in a large skillet over medium heat.

          Once the oil is hot, scoop about 2 tablespoons of the fritter mixture and gently flatten it into a patty before placing it in the oil. Fry in batches, avoiding overcrowding the pan. Cook each fritter for 3-4 minutes on each side or until golden brown and crispy.

            Once cooked, transfer fritters to a plate lined with paper towels to absorb excess oil.

              For the garlic sauce, combine mayonnaise, minced garlic, lemon juice, and season with salt and pepper in a small bowl. Stir until smooth and well mixed.

                Serve the crispy cabbage fritters warm with a side of garlic sauce for dipping.
