1.5 pounds baby potatoes

3 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon smoked paprika

Salt to taste

Black pepper to taste

Fresh chives or parsley, chopped (for garnish)

Instructions
 

Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.

    Place the baby potatoes in a large pot, cover them with water, and add a generous pinch of salt. Bring to a boil over high heat, then lower the heat and simmer for about 15-20 minutes or until the potatoes are tender when pierced with a fork.

      Drain the potatoes and let them cool for a few minutes until they’re manageable to handle.

        On a sturdy surface, use the bottom of a glass or a potato masher to gently smash each potato until it’s about ½ inch thick.

          Transfer the smashed potatoes onto the prepared baking sheet.

            Drizzle the olive oil over the smashed potatoes, then sprinkle with garlic powder, smoked paprika, salt, and black pepper. Use a brush or your hands to ensure they are well-coated.

              Bake in the preheated oven for 20-25 minutes, or until crispy and golden brown.

                Remove from the oven and let them rest for a couple of minutes.

                  Garnish with freshly chopped chives or parsley before serving.
