8 small flour tortillas

2 cups shredded cheese (such as cheddar, mozzarella, or a blend)

1/2 cup refried beans (optional)

1/4 cup finely chopped bell peppers (any color)

1/4 cup finely chopped red onion

1 teaspoon taco seasoning (optional)

2 tablespoons olive oil

Salsa, guacamole, and sour cream for dipping

Prepare the Filling: In a bowl, mix the shredded cheese with optional refried beans, chopped bell peppers, and red onion. If desired, sprinkle in the taco seasoning and stir until combined.

    Assemble the Quesadillas: Heat a large skillet over medium heat. Place one flour tortilla in the skillet, then add a generous amount of the cheese filling on one half of the tortilla. Fold the other half over to form a half-moon shape. Press down gently.

      Cook Until Crispy: Drizzle about half a tablespoon of olive oil around the quesadilla and let it cook for about 3-4 minutes until the bottom is golden brown and crispy. Carefully flip the quesadilla using a spatula and add the remaining olive oil on the other side. Cook for another 3-4 minutes until crispy and the cheese is melted.

        Cut and Repeat: Remove the cooked quesadilla from the skillet and place it on a cutting board. Use a pizza cutter or sharp knife to slice it into triangles. Repeat the process with the remaining tortillas and filling.

          Serve Warm: Arrange the crispy mini quesadillas on a platter and serve them warm with salsa, guacamole, and sour cream on the side for dipping.
