Ingredients
  

1 lb chicken thighs (boneless, skinless)

1 cup buttermilk

1 cup all-purpose flour

1/2 cup cornstarch

2 teaspoons paprika

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon cayenne pepper (adjust for spice level)

Salt and black pepper (to taste)

Vegetable oil (for frying)

Hot Honey Sauce:

1/2 cup honey

2 tablespoons hot sauce (choose your favorite)

1 tablespoon apple cider vinegar

1 teaspoon chili flakes (optional, for extra heat)

Fresh parsley (for garnish)

Instructions
 

Marinate the Chicken: In a bowl, combine the buttermilk, salt, and black pepper. Add the chicken thighs and let them marinate for at least 1 hour, or preferbly overnight in the refrigerator for maximum tenderness.

    Prepare the Breading: In a separate bowl, whisk together the flour, cornstarch, paprika, garlic powder, onion powder, cayenne pepper, salt, and black pepper.

      Heat the Oil: In a large skillet or deep pot, heat about 2 inches of vegetable oil over medium-high heat until it reaches 350°F (175°C).

        Coat the Chicken: Remove the chicken from the buttermilk, allowing any excess to drip off. Dredge each piece thoroughly in the flour mixture, pressing firmly to ensure a good coating.

          Fry the Chicken: Carefully add the chicken to the hot oil in batches (to avoid overcrowding). Fry for about 6-8 minutes, or until the chicken is golden brown and cooked through, reaching an internal temperature of 165°F (75°C). Remove and drain on paper towels.

            Make the Hot Honey Sauce: In a small saucepan, combine honey, hot sauce, apple cider vinegar, and chili flakes. Heat over low until warm, stirring to combine. Adjust the heat to your preference by adding more or less hot sauce.

              Serving: Drizzle the crispy chicken with the hot honey sauce and garnish with freshly chopped parsley. Serve with your choice of sides such as coleslaw or cornbread.
