Ingredients

1 lb (450g) boneless, skinless chicken breasts, cut into bite-sized pieces

1/2 cup all-purpose flour

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon smoked paprika

1/4 teaspoon salt

1/4 teaspoon black pepper

1 large egg, beaten

1 cup panko breadcrumbs

1/4 cup honey

1/4 cup Dijon mustard

1 tablespoon apple cider vinegar

Optional: Fresh parsley, chopped for garnish

Instructions

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

In a bowl, combine the all-purpose flour, garlic powder, onion powder, smoked paprika, salt, and black pepper. Mix well.

In another bowl, beat the egg until smooth.

In a third bowl, place the panko breadcrumbs.

Dip each piece of chicken first into the flour mixture, ensuring it's well-coated, then into the beaten egg, and finally coat it with panko breadcrumbs. Place the coated chicken bites on the prepared baking sheet.

Bake the chicken bites in the preheated oven for 15-20 minutes, turning halfway through, until golden brown and crispy.

While the chicken is baking, prepare the honey mustard sauce. In a small bowl, mix together the honey, Dijon mustard, and apple cider vinegar until well combined.

Once the chicken bites are done, remove them from the oven and drizzle the honey mustard sauce over them or serve it on the side for dipping.

If desired, sprinkle chopped fresh parsley over the chicken for an added pop of color.
