1 lb salmon fillet, skinless and cut into bite-sized pieces

1/2 cup all-purpose flour

1/4 teaspoon salt

1/4 teaspoon black pepper

1/2 teaspoon garlic powder

1/4 teaspoon paprika

1/2 cup breadcrumbs (panko preferred for extra crispiness)

2 tablespoons vegetable oil (for frying)

For the Honey Garlic Sauce:

1/4 cup honey

3 tablespoons soy sauce

2 cloves garlic, minced

1 teaspoon freshly grated ginger

1 tablespoon rice vinegar (or apple cider vinegar)

1 tablespoon sesame seeds (optional, for garnish)

Chopped green onions (optional, for garnish)

Instructions
 

Prepare the Salmon: Rinse the salmon pieces and pat them dry with a paper towel to remove excess moisture. This will help them get crispy when cooked.

    Create the Breading Station: In one bowl, combine the flour, salt, pepper, garlic powder, and paprika. In another bowl, place the breadcrumbs.

      Coat the Salmon Bites: Dip each salmon piece first into the flour mixture, ensuring it's fully coated. Shake off any excess flour, then dip it into the breadcrumbs, pressing gently to ensure a good coating. Set the coated salmon bites aside.

        Prepare the Sauce: In a small saucepan, combine the honey, soy sauce, minced garlic, grated ginger, and rice vinegar. Heat over medium heat, stirring occasionally until it simmers. Let it simmer for about 3-4 minutes until slightly thickened. Remove from heat and set aside.

          Fry the Salmon Bites: In a large skillet, heat the vegetable oil over medium-high heat. Once hot, add the breaded salmon bites in a single layer (you may need to do this in batches). Fry for 2-3 minutes on each side, or until they are golden brown and crispy.

            Toss in Sauce: Once cooked, transfer the crispy salmon bites to a large bowl. Drizzle half of the honey garlic sauce over the salmon and toss gently to coat.

              Plate and Serve: Transfer the glazed salmon bites to a serving platter. Drizzle any remaining sauce over the top and garnish with sesame seeds and chopped green onions if desired.
