1 lb fresh salmon fillet, skin removed

1/2 cup all-purpose flour

1/2 cup panko breadcrumbs

1 large egg

2 tbsp cornstarch

1/2 tsp salt

1/4 tsp black pepper

1/4 tsp garlic powder

1/4 tsp paprika

1/2 cup honey

4 cloves garlic, minced

1 tbsp soy sauce

2 tbsp apple cider vinegar

1 tbsp olive oil

Fresh parsley, chopped for garnish (optional)

Lemon wedges for serving

Instructions
 

Prepare the Salmon: Cut the salmon fillet into bite-sized cubes, approximately 1-inch pieces. Pat dry with paper towels and set aside.

    Set Up Breading Station: In three separate bowls, place the flour (mixed with salt, pepper, garlic powder, and paprika), the beaten egg, and a mixture of panko breadcrumbs and cornstarch.

      Bread the Salmon: Dredge each salmon piece first in flour, shaking off any excess. Then dip it into the beaten egg, and finally coat it with the panko-cornstarch mixture, pressing gently to adhere. Repeat for all salmon pieces.

        Make the Honey Garlic Sauce: In a small saucepan over medium heat, combine honey, minced garlic, soy sauce, apple cider vinegar, and olive oil. Stir frequently, allowing the sauce to simmer for about 5 minutes until it thickens slightly. Remove from heat and set aside.

          Cook the Salmon Bites: In a large skillet, heat a couple of tablespoons of oil over medium-high heat. Once hot, carefully place the salmon bites in a single layer, cooking in batches if necessary to avoid overcrowding. Cook for about 3-4 minutes on each side until they’re golden brown and crispy. Use a slotted spatula to transfer them to a paper towel-lined plate to drain excess oil.

            Glaze the Bites: In a large mixing bowl, toss the crispy salmon bites with the honey garlic sauce until well-coated.

              Serve: Plate the salmon bites on a serving dish, sprinkle with fresh parsley for garnish, and serve with lemon wedges on the side for an extra zest.
