1 package (17.3 oz) frozen puff pastry sheets, thawed

8 oz ham, thinly sliced

8 oz Swiss cheese, sliced

1 cup spinach, fresh

1 egg, beaten (for egg wash)

1 teaspoon garlic powder

1 teaspoon dried thyme

Salt and pepper to taste

Optional: 2 tablespoons Dijon mustard

Instructions
 

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

    On a lightly floured surface, roll out the puff pastry sheets to smooth out any creases. Cut each sheet into 4 equal squares (total of 8 squares).

      Arrange the pastry squares on the prepared baking sheet, making sure there’s space between each.

        If using, spread a thin layer of Dijon mustard onto the center of each pastry square.

          Layer each pastry square with a slice of ham, followed by a slice of Swiss cheese, and a small handful of fresh spinach.

            Sprinkle a pinch of garlic powder, dried thyme, salt, and pepper over the cheese and spinach layers.

              Top with another slice of ham and cheese, then carefully place a second pastry square on top of each stack.

                Press down gently on the edges to seal. Brush the tops with the beaten egg for a golden finish.

                  Bake in the preheated oven for 20-25 minutes or until the pastry is puffed and golden brown.

                    Remove from the oven and allow to cool slightly before serving.
