Ingredients
  

2 cups cooked shredded chicken

1 cup shredded cheese (cheddar or Mexican blend)

1/2 cup cream cheese, softened

1/4 cup green onions, sliced

1 teaspoon garlic powder

1 teaspoon chili powder

Salt and pepper to taste

10-12 small corn tortillas

Vegetable oil, for frying

Fresh cilantro, for garnish

Sour cream and salsa, for serving

Instructions
 

In a large mixing bowl, combine the cooked shredded chicken, shredded cheese, cream cheese, sliced green onions, garlic powder, chili powder, salt, and pepper. Mix until well combined.

    Heat a skillet over medium heat and lightly toast the corn tortillas on each side until pliable. This will help prevent them from breaking while rolling.

      Place a couple of tablespoons of the chicken mixture onto the lower end of each tortilla. Roll tightly and secure with a toothpick if needed.

        In a deep frying pan, heat about 1/2 inch of vegetable oil over medium-high heat. Once the oil is hot (around 350°F), gently place the taquitos seam-side down in the oil.

          Fry the taquitos until golden and crispy, about 3-4 minutes per side. Remove them from the oil and place them on paper towels to drain excess oil.

            Serve the taquitos warm, garnished with fresh cilantro, and accompanied by sour cream and salsa for dipping.
