2 large eggs

1 cup breadcrumbs (preferably panko for extra crunch)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

½ teaspoon salt

½ teaspoon black pepper

½ teaspoon cayenne pepper (optional, for heat)

Instructions
 

In a medium bowl, mix together the flour, garlic powder, onion powder, smoked paprika, salt, black pepper, and cayenne pepper (if using).

    In another bowl, whisk the two eggs until well beaten.

      Place the breadcrumbs in a separate shallow dish.

        Take a piece of chicken and dip it first into the seasoned flour, shaking off any excess.

          Next, coat the floured chicken in the beaten eggs, allowing any extra to drip off.

            Finally, roll the chicken in the breadcrumbs until fully coated. Repeat this process for all chicken pieces.

              Heat about 1 inch of cooking oil in a large skillet over medium-high heat until it reaches 350°F (175°C).

                Carefully place the coated chicken nuggets in the hot oil, ensuring not to overcrowd the pan. Fry them for about 4-5 minutes on each side, or until golden brown and cooked through.

                  Use a slotted spoon to transfer the cooked nuggets to a paper towel-lined plate to drain excess oil.
