Ingredients

1 lb (450g) large shrimp, peeled and deveined

1 cup buttermilk

1 cup all-purpose flour

1/2 cup cornmeal

1 tsp garlic powder

1 tsp onion powder

1 tsp smoked paprika

1/2 tsp cayenne pepper (adjust for spice preference)

Salt and pepper to taste

Oil for frying

Buffalo Sauce:

1/2 cup hot sauce (such as Frank's RedHot)

1/4 cup unsalted butter, melted

1 tbsp apple cider vinegar

1 tsp honey (optional for sweetness)

Instructions

Marinate the Shrimp: In a mixing bowl, combine shrimp with buttermilk. Cover and refrigerate for at least 30 minutes to tenderize and flavor the shrimp.

Prepare the Coating: In a large mixing bowl, whisk together flour, cornmeal, garlic powder, onion powder, smoked paprika, cayenne pepper, salt, and pepper.

Heat the Oil: In a deep skillet or frying pan, heat about 2 inches of oil over medium heat until it reaches 350°F (175°C).

Coat the Shrimp: Remove the shrimp from the buttermilk, allowing excess to drip off. Dredge each shrimp in the flour mixture, ensuring it is thoroughly coated. Shake off any excess flour.

Fry the Shrimp: Carefully place the coated shrimp in the hot oil, frying in batches to avoid overcrowding. Fry until golden brown and crispy, about 2-3 minutes per side. Use a slotted spoon to transfer to a paper towel-lined plate to drain excess oil.

Make the Buffalo Sauce: In a small saucepan, combine the hot sauce, melted butter, apple cider vinegar, and honey (if using). Heat over low heat until warmed and well mixed.

Toss the Shrimp: In a large bowl, toss the crispy shrimp with the buffalo sauce until fully coated.

Serve: Plate the crispy buffalo shrimp, optionally garnishing with fresh celery sticks and a side of ranch or blue cheese dressing for dipping.
