1 lb chicken breasts, cut into bite-sized pieces

1 cup all-purpose flour

2 large eggs

1 cup panko breadcrumbs

1 tsp garlic powder

1 tsp onion powder

1/2 tsp paprika

1/2 tsp salt

1/2 tsp black pepper

Vegetable oil, for frying

1/2 cup mayonnaise

1/4 cup sweet chili sauce

1 tbsp Sriracha (adjust to spice preference)

1 tbsp honey

1 tbsp lime juice

Chopped green onions, for garnish

Sesame seeds, for garnish

Instructions
 

Prepare the Chicken: In a large bowl, mix the flour with garlic powder, onion powder, paprika, salt, and black pepper. In another bowl, beat the eggs. Place the panko breadcrumbs in a third bowl.

    Coat the Chicken: Dip each piece of chicken in the seasoned flour, shaking off the excess. Then, dip it into the egg mixture, letting any excess drip off, and finally coat it with panko breadcrumbs, pressing lightly to adhere. Repeat for all chicken pieces.

      Fry the Chicken: In a large skillet, heat about 1 inch of vegetable oil over medium-high heat. Once the oil is hot, carefully add the coated chicken in batches (do not overcrowd). Fry for about 4-5 minutes per side or until golden brown and crispy. Remove the chicken and place it on a paper towel-lined plate to absorb excess oil.

        Make the Bang Bang Sauce: In a mixing bowl, combine mayonnaise, sweet chili sauce, Sriracha, honey, and lime juice. Mix well until smooth and creamy. Adjust spice levels by adding more Sriracha if desired.

          Toss the Chicken: In a large bowl, gently toss the fried chicken pieces with the Bang Bang sauce until evenly coated.
