Ingredients

1 pound fresh asparagus, trimmed

1 cup panko breadcrumbs

½ cup grated Asiago cheese

¼ cup all-purpose flour

2 large eggs

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon black pepper

½ teaspoon salt

Olive oil spray or 2 tablespoons olive oil

Lemon wedges (for serving)

Instructions

Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper for easy cleanup.

Place the trimmed asparagus in a colander and rinse under cold water. Pat them dry with a paper towel.

In a shallow bowl, mix the flour with salt, pepper, garlic powder, and onion powder. This will create a seasoned flour coating.

In a second shallow bowl, whisk the eggs until fully combined.

In a third shallow bowl, combine the panko breadcrumbs and the grated Asiago cheese, mixing well to distribute the cheese evenly.

Working with one asparagus spear at a time, first coat it lightly in the flour mixture, shaking off any excess.

Next, dip it into the whisked egg, allowing any extra egg to drip off.

Finally, roll the spear in the panko-Asiago mixture until fully coated.

Place the coated asparagus spears on the prepared baking sheet in a single layer, making sure they are not overcrowded. If desired, spray lightly with olive oil for extra crispiness.

Bake in the preheated oven for 15-20 minutes, or until the asparagus is golden brown and crispy.

Remove from the oven and let cool slightly before serving.
