Ingredients

1 cup olive oil

10 cloves of garlic, minced

2 tablespoons crushed red pepper flakes

1 tablespoon dried oregano

1 tablespoon paprika (smoked or sweet)

1 teaspoon cayenne pepper (adjust to taste)

1 teaspoon black pepper

1 teaspoon salt

2 bay leaves

1 tablespoon fresh parsley, finely chopped (for garnish)

Instructions

In a small saucepan, combine the olive oil and minced garlic over low heat.

Heat the oil gently, allowing the garlic to infuse but not brown—this should take about 5-7 minutes.

Once the garlic is fragrant and slightly softened, add the crushed red pepper flakes, oregano, paprika, cayenne pepper, black pepper, and salt to the saucepan.

Stir the mixture well to combine and allow it to simmer for an additional 5 minutes.

Add the bay leaves and continue to heat on low for another 10-15 minutes, monitoring closely to prevent burning.

Remove from heat and let it cool completely in the saucepan.

Once cooled, strain the oil through a fine mesh sieve into a clean glass jar, discarding the solids.

Optionally, you can taste the oil and adjust the seasoning, adding more salt or red pepper flakes if desired.

Seal the jar tightly and store it in a cool, dark place for at least 24 hours to allow the flavors to develop before using.

Prep Time: 10 minutes | Total Time: 45 minutes | Servings: about 1 cup
