Ingredients

For the Cheesecake Cupcakes:

1 cup graham cracker crumbs

2 tablespoons unsalted butter, melted

1 (8 oz) package cream cheese, softened

½ cup granulated sugar

1 teaspoon vanilla extract

2 large eggs

½ cup sour cream

1 teaspoon lemon juice

For the Brûlée Topping:

¼ cup granulated sugar

1 tablespoon unsalted butter, melted

Instructions

Prepare the Cupcake Base: Preheat your oven to 325°F (160°C). Line a muffin tin with cupcake liners. In a bowl, mix the graham cracker crumbs and melted butter until combined. Press about 1 tablespoon of the mixture into the bottom of each cupcake liner to form the crust.

Make the Cheesecake Batter: In a large mixing bowl, beat the cream cheese until smooth. Gradually add in the granulated sugar and vanilla extract, mixing until well incorporated. Add the eggs one at a time, mixing well after each addition. Finally, stir in the sour cream and lemon juice until smooth and creamy.

Fill the Cupcake Liners: Spoon the cheesecake batter into each cupcake liner, filling them about ¾ full. Bake for 18-20 minutes or until the edges are set but the centers still have a slight jiggle. Let them cool in the pan for 10 minutes, then transfer them to a wire rack to cool completely.

Prepare the Brûlée Topping: In a small bowl, combine the granulated sugar and melted butter. Mix well, ensuring that the sugar is well coated with butter.

Brûlée the Cupcakes: Once the cheesecake cupcakes are completely cooled, preheat your broiler. Sprinkle about 1 teaspoon of the sugar mixture evenly over each cupcake. Place them under the broiler for about 1-3 minutes, or until the sugar caramelizes to a golden brown. Watch closely to prevent burning!

Chill and Serve: Allow the caramelized topping to cool and harden for a few minutes. For best results, refrigerate the cupcakes for at least 30 minutes before serving. Enjoy!
