1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

2 tablespoons sugar

2 (8 oz) packages cream cheese, softened

1 cup sugar

2 large eggs

1 teaspoon vanilla extract

1 cup heavy cream

2 tablespoons cornstarch

¼ cup brown sugar (for brûlée topping)

Prepare the Crust: Preheat your oven to 325°F (160°C). In a medium bowl, mix together graham cracker crumbs, melted butter, and 2 tablespoons of sugar until evenly combined. Press the mixture firmly into the bottom of a 9x9-inch baking pan lined with parchment paper. Bake for 10 minutes, then remove from the oven and set aside to cool.

    Make the Cheesecake Filling: In a large mixing bowl, beat together the softened cream cheese and 1 cup of sugar until smooth and creamy. Add in the eggs one at a time, mixing well after each addition, followed by the vanilla extract.

      Combine with Heavy Cream: In a separate bowl, whisk together the heavy cream and cornstarch until smooth. Gradually add this mixture to the cream cheese mixture, beating until just combined.

        Bake the Cheesecake Bars: Pour the cheesecake batter over the cooled crust in the baking pan. Smooth the top with a spatula. Bake in the preheated oven for about 40-45 minutes, or until the edges are set, and the center is slightly jiggly.

          Cool and Chill: Once baked, turn off the oven, crack the door open, and let the cheesecake cool for about 1 hour in the oven. Then transfer it to the refrigerator and chill for at least 4 hours or overnight for best results.

            Create the Brûlée Top: Once chilled, evenly sprinkle brown sugar over the top of the cheesecake. Use a kitchen torch to caramelize the sugar until it forms a crispy, golden crust. If you do not have a torch, you can place the bars under the broiler for a few minutes, but watch closely to prevent burning.

              Slice and Serve: Remove from the fridge, slice into bars, and enjoy!
