1 cup all-purpose flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1/2 cup unsalted butter, softened

1 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

1 cup heavy cream

1/2 cup whole milk

2 tablespoons granulated sugar (for the brûlée topping)

Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.

    In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.

      In a large mixing bowl, cream the softened butter and 1 cup granulated sugar until light and fluffy, about 3-4 minutes.

        Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.

          Gradually add the dry ingredients to the butter mixture, alternating with the heavy cream and whole milk. Start with the dry ingredients, mixing until just combined, and finish with the wet ingredients.

            Pour the batter into the prepared cake pan and smooth the top.

              Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.

                Let the cake cool in the pan for 10 minutes, then remove it from the pan and allow it to cool completely on a wire rack.

                  Once cooled, place the cake on a heatproof serving dish. Evenly sprinkle the remaining 2 tablespoons of granulated sugar over the top of the cake.

                    Using a kitchen torch, carefully caramelize the sugar until it forms a golden crust (if you don’t have a torch, broil it in the oven for 1-2 minutes, watching closely to prevent burning).

                      Allow the caramelized sugar to cool and harden for about 5 minutes before slicing.
