Creamy Tuscan Shrimp Linguine

8 oz linguine pasta

1 lb large shrimp, peeled and deveined

2 tbsp olive oil

4 cloves garlic, minced

1 cup cherry tomatoes, halved

1 cup fresh spinach, roughly chopped

1 cup heavy cream

1/2 cup grated Parmesan cheese

1 tsp Italian seasoning

Salt and pepper to taste

Fresh basil leaves for garnish (optional)

Zest of 1 lemon

Juice of 1/2 lemon

Cook the Linguine: In a large pot, bring salted water to a boil. Add the linguine and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain and set the linguine aside.

    Sauté Shrimp: In a large skillet over medium heat, add olive oil. Once hot, add the shrimp and season with salt, pepper, and Italian seasoning. Cook for about 2-3 minutes on each side or until the shrimp turn pink and opaque. Remove the shrimp from the skillet and set aside.

      Prepare the Sauce: In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant. Add cherry tomatoes and cook until they begin to soften, about 3 minutes. Stir in the fresh spinach and cook for another minute until wilted.

        Create Creamy Mixture: Lower the heat and pour in the heavy cream, stirring to combine. Gradually add the Parmesan cheese, stirring until melted and the sauce thickens slightly. If the sauce is too thick, add some reserved pasta water to reach your desired consistency.

          Combine Everything: Return the shrimp to the skillet and gently toss in the cooked linguine until everything is well coated. Add the lemon zest and lemon juice, mixing thoroughly to combine. Adjust seasoning with salt and pepper if needed.

            Serve: Divide the creamy Tuscan shrimp linguine among plates. Garnish with fresh basil leaves and extra Parmesan cheese if desired.
