Ingredients
  

12 oz fresh cheese ravioli

2 tablespoons olive oil

3 cloves garlic, minced

1 cup cherry tomatoes, halved

1 cup spinach, fresh

½ cup heavy cream

½ cup grated Parmesan cheese

¼ teaspoon red pepper flakes (optional)

Salt and pepper to taste

Fresh basil leaves, for garnish

Cook the Ravioli: In a large pot of salted boiling water, cook the ravioli according to package instructions until al dente. Drain and set aside, reserving ½ cup of the pasta water.

    Sauté Aromatics: In a large skillet over medium heat, warm the olive oil. Add the minced garlic and sauté for about 1 minute until fragrant.

      Add Tomatoes and Spinach: Stir in the cherry tomatoes and cook for 3-4 minutes until they start to soften. Add the fresh spinach, cooking until wilted (around 2 minutes).

        Create the Cream Sauce: Reduce the heat to low and pour in the heavy cream. Stir well to combine, then add the grated Parmesan cheese, mixing until the cheese has melted and the sauce is smooth. If desired, add the red pepper flakes for a bit of heat.

          Combine Ravioli: Gently fold the cooked ravioli into the sauce, adding reserved pasta water a little at a time to reach desired creaminess. Season with salt and pepper to taste.

            Serve and Garnish: Once everything is heated through, dish out the creamy ravioli onto plates. Garnish with fresh basil leaves and an extra sprinkle of Parmesan if you like.
