Ingredients

1 pound large prawns (peeled and deveined)

2 tablespoons olive oil

3 cloves garlic (minced)

1 cup cherry tomatoes (halved)

1 cup baby spinach

1 cup heavy cream

1/2 cup grated Parmesan cheese

1 teaspoon Italian seasoning

1/2 teaspoon red pepper flakes (optional)

Salt and pepper to taste

Fresh basil (for garnish)

Cooked pasta (for serving, optional)

Instructions

Sauté Prawns: In a large skillet, heat the olive oil over medium-high heat. Add the prawns and season with salt and pepper. Cook for about 2-3 minutes on each side or until they turn pink and opaque. Remove the prawns from the skillet and set aside.

Sauté Garlic and Tomatoes: In the same skillet, add the minced garlic and cook for about 30 seconds until fragrant. Then add the cherry tomatoes and Italian seasoning. Cook for 3-4 minutes until the tomatoes begin to soften.

Add Spinach: Stir in the spinach and cook until it wilts, about 1-2 minutes.

Make Creamy Sauce: Lower the heat to medium, then pour in the heavy cream and bring it to a simmer. Stir in the grated Parmesan cheese until it melts and the sauce thickens. For an extra kick, add red pepper flakes at this stage.

Combine Prawns: Return the cooked prawns to the skillet and toss to coat them in the creamy sauce. Adjust seasoning with salt and pepper to taste.

Serve: Serve the creamy Tuscan prawns over cooked pasta or on their own. Garnish with fresh basil leaves for a burst of flavor.
