Ingredients

1 pound large shrimp, peeled and deveined

2 tablespoons olive oil

4 cloves garlic, minced

1 cup cherry tomatoes, halved

1 cup fresh spinach, chopped

1 cup heavy cream

1/2 cup grated Parmesan cheese

1 teaspoon Italian seasoning

Salt and pepper, to taste

Fresh basil leaves, for garnish

Lemon wedges, for serving

Instructions

Sauté the Shrimp: In a large skillet, heat the olive oil over medium-high heat. Add the shrimp and season with salt and pepper. Cook for about 2-3 minutes on each side until they turn pink and opaque. Remove the shrimp from the skillet and set aside.

Prepare the Garlic and Vegetables: In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant. Be careful not to burn it.

Create the Sauce: Add the cherry tomatoes to the skillet and cook for another 2-3 minutes until they start to blister. Then, add the chopped spinach and stir until wilted.

Make it Creamy: Reduce the heat to medium and pour in the heavy cream. Stir gently and bring to a simmer. Add the grated Parmesan cheese and Italian seasoning, and continue to stir until the cheese is melted and the sauce is smooth.

Combine and Serve: Return the shrimp to the skillet. Toss gently to coat the shrimp in the creamy sauce. Adjust seasoning with more salt and pepper if necessary.

Garnish and Enjoy: Serve hot, garnished with fresh basil leaves and lemon wedges for that zesty touch. Pair with pasta, rice, or crusty bread for a complete meal.
