12 oz pasta (penne or fettuccine work well)

1 cup sun-dried tomatoes (oil-packed, drained and chopped)

3 cups fresh spinach

1 cup heavy cream

1/2 cup grated Parmesan cheese

2 cloves garlic, minced

2 tablespoons olive oil

1 teaspoon Italian seasoning

Salt and pepper to taste

Fresh basil leaves for garnish (optional)

Cook the Pasta: In a large pot of salted boiling water, cook the pasta according to package instructions until al dente. Reserve 1 cup of pasta water, then drain and set aside.

    Sauté Aromatics: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and cook for about 1 minute until fragrant, being careful not to burn it.

      Add Sun-Dried Tomatoes: Stir in the chopped sun-dried tomatoes and Italian seasoning, cooking for another 2-3 minutes until the tomatoes are heated through.

        Make it Creamy: Pour in the heavy cream and stir to combine. Allow the mixture to simmer for about 3-4 minutes, letting it thicken slightly.

          Incorporate Spinach: Add the fresh spinach to the skillet, stirring until wilted and mixed into the sauce.

            Combine Pasta and Sauce: Add the cooked pasta to the skillet, tossing it with the creamy mixture. If the sauce is too thick, gradually add the reserved pasta water until you reach your desired consistency.
