Ingredients
  

12 oz fettuccine pasta

1 lb boneless, skinless chicken breasts, cut into bite-sized pieces

2 tbsp olive oil

3 cloves garlic, minced

1/2 cup sun-dried tomatoes in oil, drained and chopped

1 cup heavy cream

1/2 cup chicken broth

1 cup parmesan cheese, grated

1 tsp Italian seasoning

Salt and pepper to taste

Fresh basil leaves for garnish (optional)

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Add the fettuccine and cook according to package instructions until al dente. Drain and set aside, reserving a little pasta water.

    Sauté the Chicken: In a large skillet over medium heat, add the olive oil. Once hot, add the chicken pieces. Season with salt and pepper and cook until golden brown and cooked through, about 6-8 minutes. Remove the chicken from the skillet and set aside.

      Prepare the Garlic and Tomatoes: In the same skillet, add the minced garlic and sauté for 1 minute until fragrant. Add the chopped sun-dried tomatoes and cook for another 2-3 minutes, allowing the flavors to meld.

        Make the Cream Sauce: Pour in the heavy cream and chicken broth. Stir in the Italian seasoning and allow the mixture to come to a gentle simmer. Let it cook for about 3-4 minutes, then gradually whisk in the grated parmesan cheese until melted and creamy.

          Combine Ingredients: Return the cooked chicken to the skillet. If the sauce is too thick, add a little reserved pasta water to reach your desired consistency. Add the cooked fettuccine and toss everything together until well coated in the creamy sauce.

            Serve: Adjust the seasoning with additional salt and pepper as needed. Serve hot, garnished with fresh basil leaves and an extra sprinkle of parmesan cheese if desired.
