9 lasagna noodles

2 cups ricotta cheese

1 cup grated Parmesan cheese

2 cups shredded mozzarella cheese

1 tablespoon olive oil

1 small onion, chopped

3 cloves garlic, minced

8 ounces mushrooms, sliced

4 cups fresh spinach

1 teaspoon dried oregano

1 teaspoon dried basil

Salt and pepper to taste

1 cup heavy cream

1/2 teaspoon red pepper flakes (optional, for a kick)

Instructions
 

Preheat your oven to 375°F (190°C).

    Cook the lasagna noodles according to package instructions. Drain and set aside.

      In a large skillet, heat olive oil over medium heat. Sauté the chopped onion until soft, about 3 minutes.

        Add the minced garlic and sliced mushrooms to the skillet. Cook until the mushrooms are soft and golden, about 5-7 minutes.

          Stir in the fresh spinach, oregano, basil, salt, pepper, and red pepper flakes (if using). Cook until the spinach is wilted, about 2-3 minutes. Remove from heat and let cool slightly.

            In a mixing bowl, combine the ricotta cheese, half of the Parmesan cheese, and heavy cream. Mix well and season with salt and pepper as desired.

              In a 9x13 inch baking dish, spread a thin layer of the ricotta mixture on the bottom. Place 3 noodles on top, followed by half of the spinach and mushroom mixture, and a sprinkle of mozzarella cheese.

                Repeat the layers: spread another layer of ricotta, 3 more noodles, the rest of the spinach mixture, and half of the remaining mozzarella cheese.

                  Top with the final layer of noodles, the remaining ricotta mixture, and the remaining mozzarella and Parmesan cheese on top.

                    Cover the dish with aluminum foil and bake for 25 minutes.

                      Remove foil and bake for an additional 15 minutes, or until the cheese is bubbly and golden brown. Let it cool for 10 minutes before slicing.
