12 oz rigatoni pasta

1 lb Italian sausage (mild or spicy, your choice)

2 cups fresh spinach, chopped

1 cup cherry tomatoes, halved

1 cup heavy cream

1/2 cup grated Parmesan cheese

2 cloves garlic, minced

1 medium onion, diced

2 tbsp olive oil

1 tsp Italian herbs (basil, oregano, thyme)

Salt and pepper to taste

Fresh basil leaves for garnish (optional)

Instructions
 

Cook Pasta: In a large pot of salted boiling water, cook rigatoni according to package instructions until al dente. Reserve 1 cup of pasta water, then drain and set aside.

    Sauté Sausage: In a large skillet, heat the olive oil over medium heat. Add the diced onion and cook for about 3-4 minutes until translucent. Add the Italian sausage and break it apart with a spatula. Cook until browned and cooked through, about 6-8 minutes.

      Add Flavor: Stir in the minced garlic and Italian herbs, cooking for an additional minute until fragrant.

        Incorporate Cream and Veggies: Pour in the heavy cream and bring to a gentle simmer. Add the chopped spinach and halved cherry tomatoes, stirring until the spinach has wilted and the tomatoes are slightly softened, about 2-3 minutes.

          Combine Pasta and Sauce: Add the cooked rigatoni to the skillet along with the reserved pasta water (start with half a cup and add more as needed for desired creaminess). Stir until well coated.

            Finish with Cheese: Remove from heat and stir in the grated Parmesan cheese. Season with salt and pepper to taste.
