2 pints cherry tomatoes, halved

3 tablespoons olive oil

Salt and pepper to taste

1 teaspoon dried oregano

3 cloves garlic, minced

1/2 cup heavy cream

1/4 cup grated Parmesan cheese

12 oz pasta (such as fettuccine or penne)

Fresh basil leaves for garnish

Optional: a pinch of red pepper flakes for spice

Instructions
 

Preheat your oven to 400°F (200°C).

    In a large baking dish, combine the halved cherry tomatoes, olive oil, salt, pepper, and dried oregano. Toss everything until the tomatoes are well coated. Spread the tomatoes in a single layer.

      Roast the tomatoes in the oven for 25-30 minutes, until they are soft and caramelized, stirring halfway through.

        While the tomatoes are roasting, bring a large pot of salted water to a boil. Add the pasta and cook according to package directions until al dente. Drain and set aside, reserving 1/2 cup of the pasta water.

          Once the tomatoes are done roasting, add the minced garlic to the baking dish and stir to combine. Roast for an additional 5 minutes to cook the garlic.

            Remove the baking dish from the oven. Add the roasted tomato mixture to a large pan over medium heat, then pour in the heavy cream and Parmesan cheese. Toss everything together and let simmer for 2-3 minutes. If the sauce is too thick, gradually add the reserved pasta water until desired consistency is achieved.

              Add the cooked pasta to the pan and gently toss to combine everything. Season with more salt, pepper, and a pinch of red pepper flakes if desired.

                Serve warm, garnished with fresh basil leaves and an extra sprinkle of Parmesan if desired.
