Ingredients
  

12 oz fettuccine or pasta of choice

2 boneless, skinless chicken breasts

1 cup ricotta cheese

1 cup heavy cream

1 cup grated Parmesan cheese

3 cloves garlic, minced

1 cup cherry tomatoes, halved

1 cup fresh spinach

2 tbsp olive oil

1 tsp Italian seasoning

Salt and pepper to taste

Fresh basil leaves for garnish

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the fettuccine according to package instructions until al dente. Drain and set aside, reserving about 1 cup of pasta water.

    Cook the Chicken: Season the chicken breasts with salt, pepper, and Italian seasoning. In a large skillet, heat olive oil over medium heat. Add the chicken breasts and cook for about 6-7 minutes on each side until golden brown and cooked through. Remove from skillet and let rest before slicing.

      Sauté the Garlic and Veggies: In the same skillet, add minced garlic and sauté for about 1 minute until fragrant. Add cherry tomatoes and cook until they start to soften, about 3-4 minutes. Next, add the fresh spinach and cook until wilted.

        Make the Creamy Sauce: Reduce the heat to low, then stir in the ricotta cheese and heavy cream. Mix until well combined and creamy. If the sauce is too thick, gradually add reserved pasta water until you reach your desired consistency. Stir in grated Parmesan cheese and season with salt and pepper to taste.

          Combine Pasta and Sauce: Add the cooked pasta to the skillet and toss to combine, ensuring the pasta is coated in the creamy sauce. Slice the cooked chicken and place it on top of the pasta.

            Serve: Garnish with fresh basil leaves and extra Parmesan cheese if desired. Serve immediately and enjoy your creamy masterpiece!
