1 package (16 oz) frozen pierogi (cheese and potato filling works well)

2 tablespoons olive oil

1 pound turkey sausage, sliced

1 medium onion, diced

2 cloves garlic, minced

1 cup kale or spinach, chopped

1 cup heavy cream

1 cup chicken broth

1 teaspoon smoked paprika

Salt and pepper to taste

1/2 cup fresh grated Parmesan cheese

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pierogi: In a large pot of boiling salted water, add the frozen pierogi and cook according to package instructions, typically 3-5 minutes. Once cooked, drain and set aside.

    Sauté the Turkey Sausage: In a large skillet over medium heat, add olive oil. Once hot, add the sliced turkey sausage. Cook until browned and cooked through, about 5-7 minutes. Remove from the skillet and set aside.

      Sauté Aromatics: In the same skillet, add the diced onion and cook for 3-4 minutes until translucent. Add the minced garlic and cook for another minute until fragrant.

        Add Greens: Stir in the chopped kale or spinach and sauté until wilted, about 2-3 minutes.

          Make it Creamy: Pour in the chicken broth and heavy cream, then add the smoked paprika, salt, and pepper. Bring the mixture to a simmer and let it cook for 3-5 minutes, allowing it to thicken slightly.

            Combine Ingredients: Carefully add the cooked pierogi and turkey sausage back into the skillet. Toss everything together gently to coat the pierogi in the creamy sauce. Cook for another 2-3 minutes to heat through.

              Finishing Touches: Stir in the grated Parmesan cheese until melted and creamy. Adjust seasoning if needed.
