1 lb Italian sausage (sweet or spicy, casings removed)

1 medium onion, chopped

2 cloves garlic, minced

3 medium carrots, diced

2 celery stalks, diced

1 can (14.5 oz) diced tomatoes, with juice

4 cups chicken broth

1 cup heavy cream

1 cup ditalini pasta

1 cup freshly grated Parmesan cheese

1 teaspoon Italian seasoning

Salt and pepper to taste

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the chopped onion, carrots, and celery. Sauté for about 5 minutes until they start to soften.

    Add the minced garlic and cook for an additional minute until fragrant.

      Add the Italian sausage to the pot, breaking it up with a spoon. Cook until browned and no longer pink, about 7-8 minutes.

        Stir in the diced tomatoes with their juice, chicken broth, and Italian seasoning. Bring the mixture to a boil.

          Once boiling, reduce heat to a simmer and add the ditalini pasta. Cook according to package instructions until al dente (usually about 6-8 minutes).

            Once the pasta is cooked, stir in the heavy cream and grated Parmesan cheese, mixing well until the cheese is melted and the soup is creamy.

              Season with salt and pepper to taste. Let the soup simmer for an additional 5 minutes to meld the flavors together.

                Remove from heat and garnish with fresh chopped parsley before serving.
