4 bone-in pork chops (about 1 inch thick)

Salt and pepper, to taste

2 tablespoons olive oil

1 medium onion, finely chopped

3 cloves garlic, minced

8 ounces cremini mushrooms, sliced

1 cup chicken broth

1 cup heavy cream

2 tablespoons Dijon mustard

1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)

1 teaspoon paprika

Fresh parsley, chopped (for garnish)

Instructions
 

Start by seasoning both sides of the pork chops with salt and pepper.

    In a large skillet over medium-high heat, add olive oil. Once hot, sear the pork chops for about 4-5 minutes per side until they are golden brown. Remove the chops from the skillet and set aside on a plate.

      In the same skillet, add the chopped onion and sauté for about 2-3 minutes until translucent. Then, add minced garlic and sauté for another minute until fragrant.

        Add the sliced cremini mushrooms to the skillet and cook for about 5 minutes, stirring occasionally, until they are browned and have released their moisture.

          Pour in the chicken broth, scraping up any browned bits from the bottom of the skillet. Bring to a simmer.

            Reduce the heat to medium-low and stir in the heavy cream, Dijon mustard, thyme, and paprika. Mix well until combined.

              Return the pork chops to the skillet, nestling them into the creamy mushroom sauce. Simmer for about 10-12 minutes until the pork is cooked through (an internal temperature of 145°F).

                Once cooked, remove the skillet from heat and let rest for a few minutes. The sauce will thicken slightly as it cools.
