Ingredients

2 cups cooked wild rice

2 tablespoons olive oil

1 onion, diced

3 cloves garlic, minced

2 carrots, diced

2 celery stalks, diced

8 ounces cremini mushrooms, sliced

1 pound boneless, skinless chicken breasts, diced

4 cups chicken broth

1 cup heavy cream

1 teaspoon dried thyme

1 teaspoon dried rosemary

Salt and pepper to taste

Fresh parsley, chopped for garnish

Instructions

In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until translucent.

Stir in the minced garlic and cook for an additional minute until fragrant.

Add the diced carrots and celery, cooking for another 5 minutes until they begin to soften.

Incorporate the sliced mushrooms and diced chicken, stirring occasionally until the chicken is no longer pink, about 6-8 minutes.

Pour in the chicken broth and bring the mixture to a gentle boil. Reduce the heat and let it simmer for about 15 minutes.

Once the chicken is thoroughly cooked, add the cooked wild rice, heavy cream, thyme, and rosemary. Stir to combine, allowing the soup to simmer for another 10 minutes for the flavors to meld.

Season with salt and pepper to taste before serving.

Garnish each bowl of soup with freshly chopped parsley for a touch of color and freshness.
