12 oz penne pasta

1 lb boneless, skinless chicken breasts, cut into bite-sized pieces

1 cup asparagus, trimmed and cut into 2-inch pieces

8 oz cremini mushrooms, sliced

3 cloves garlic, minced

1 cup heavy cream

1 cup chicken broth

1 cup grated Parmesan cheese

2 tablespoons olive oil

1 teaspoon Italian seasoning

Salt and pepper to taste

Fresh parsley, chopped for garnish

Cook the Pasta: In a large pot of salted boiling water, cook the penne pasta according to package instructions until al dente. Drain and set aside.

    Sauté Chicken: In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the chicken pieces, season with salt, pepper, and Italian seasoning. Cook for about 5-7 minutes, stirring occasionally until the chicken is browned and cooked through. Remove chicken from the skillet and set aside.

      Cook the Vegetables: In the same skillet, add another tablespoon of olive oil. Add the sliced mushrooms and sauté for about 3 minutes until they start to soften. Add the asparagus and cook for another 2-3 minutes. Stir in the minced garlic and cook for an additional minute until fragrant.

        Make the Cream Sauce: Pour in the chicken broth and bring to a simmer. Reduce the heat to medium-low and pour in the heavy cream. Stir well and let it simmer for about 3-4 minutes, allowing it to thicken slightly.

          Combine Ingredients: Add the cooked chicken back to the skillet along with the cooked penne pasta. Sprinkle in the grated Parmesan cheese and toss everything together until the pasta is well coated in the creamy sauce. If the sauce is too thick, add a splash more chicken broth.

            Serve: Remove from heat, and adjust seasoning with salt and pepper if necessary.
