12 oz fettuccine pasta

1 lb large shrimp, peeled and deveined

3 tablespoons olive oil

4 cloves garlic, minced

1/2 cup onion, finely chopped

1 cup heavy cream

1/2 cup grated Parmesan cheese

1 teaspoon lemon zest

1 tablespoon lemon juice

1/2 teaspoon red pepper flakes (adjust for spice preference)

Salt and pepper, to taste

1/4 cup fresh parsley, chopped

Optional: extra lemon wedges for serving

Instructions
 

Cook the Fettuccine: In a large pot of boiling salted water, cook the fettuccine according to package instructions until al dente. Drain and set aside, reserving 1/2 cup of pasta water.

    Sauté Shrimp: In a large skillet over medium heat, add 2 tablespoons of olive oil. Once hot, add the shrimp in a single layer. Season with salt and pepper, and cook until they turn pink, about 2-3 minutes per side. Remove from skillet and set aside.

      Make the Sauce: In the same skillet, add the remaining tablespoon of olive oil. Add minced garlic and chopped onion, and sauté until softened, about 3-4 minutes. Pour in the heavy cream and bring to a gentle simmer.

        Combine Ingredients: Stir in the Parmesan cheese, lemon zest, lemon juice, and red pepper flakes. Let the sauce cook for another 3-4 minutes until slightly thickened. If the sauce is too thick, add some reserved pasta water to reach your desired consistency.

          Toss Pasta and Shrimp: Return the cooked shrimp to the skillet, along with the fettuccine. Toss everything together until well-coated in the creamy sauce. Cook for an additional 2-3 minutes to heat through.

            Garnish: Remove from heat and stir in fresh parsley. Taste and adjust seasoning with more salt, pepper, or lemon juice if desired.

              Serve: Plate the creamy shrimp pasta and garnish with additional parsley and lemon wedges on the side for extra zest.
