Ingredients

1 package (9 oz) refrigerated cheese ravioli

2 tablespoons olive oil

2 cloves garlic, minced

1 cup heavy cream

1 lemon (zest and juice)

1/2 cup grated Parmesan cheese

1 teaspoon fresh thyme leaves (or 1/4 teaspoon dried thyme)

Salt and pepper to taste

Fresh parsley for garnish

Instructions

Cook the Ravioli: In a large pot, bring salted water to a boil. Add the ravioli and cook according to package instructions, usually about 3-5 minutes. Drain and set aside.

Sauté Garlic: In a large skillet over medium heat, add olive oil. Once hot, add minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.

Make the Cream Sauce: Lower the heat to medium-low and pour in the heavy cream. Stir well and let it simmer for a minute. Add in the lemon zest and juice, followed by the grated Parmesan cheese. Stir until the cheese is melted and the sauce is well combined.

Season the Sauce: Add thyme, salt, and pepper to taste. You can adjust the flavors according to your preference, adding more lemon zest for brightness or more cheese for richness if desired.

Combine: Gently fold in the cooked ravioli, ensuring they are thoroughly coated in the creamy lemon sauce.

Serve: Plate the ravioli and drizzle with a little extra sauce from the skillet. Garnish with fresh parsley for a pop of color and added flavor. Serve immediately and enjoy!
