Ingredients

12 ounces penne pasta

1 pound Italian sausage (mild or spicy, casings removed)

1 tablespoon olive oil

3 cloves garlic, minced

1 small onion, finely chopped

1 teaspoon dried oregano

1 teaspoon dried basil

1/2 teaspoon red pepper flakes (optional, for heat)

1 cup heavy cream

1/2 cup chicken broth

1 cup grated Parmesan cheese

Salt and pepper to taste

Fresh basil leaves, for garnish

Instructions

Cook the Pasta: In a large pot, bring salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. Reserve 1/2 cup of the pasta cooking water, then drain the pasta and set aside.

Cook the Sausage: In a large skillet over medium heat, add the olive oil. Once hot, add the Italian sausage, breaking it apart with a spoon. Cook until browned and cooked through, about 5-7 minutes. Remove the sausage from the skillet and set aside.

Sauté Vegetables: In the same skillet, add the chopped onion and cook until translucent, about 2-3 minutes. Add the minced garlic, oregano, basil, and red pepper flakes, cooking for an additional minute until fragrant.

Create the Sauce: Pour in the chicken broth and bring it to a simmer. Reduce the heat to low and stir in the heavy cream. Allow the mixture to simmer gently for 5 minutes, stirring occasionally.

Combine Ingredients: Stir in the cooked sausage and Parmesan cheese into the sauce, mixing until the cheese has melted and the sauce is creamy. If the sauce is too thick, add some of the reserved pasta water until the desired consistency is reached.

Mix with Pasta: Add the cooked penne pasta to the skillet and toss until the pasta is well coated with the creamy sauce. Season with salt and pepper to taste.

Serve: Serve hot, garnished with fresh basil leaves and additional Parmesan cheese if desired.
