4 salmon fillets (about 6 ounces each)

2 cups mushrooms (cremini or button), sliced

4 cloves garlic, minced

1 cup heavy cream

1/2 cup chicken or vegetable broth

1 tablespoon olive oil

1 tablespoon butter

1 teaspoon dried thyme

1 teaspoon lemon juice

Salt and pepper to taste

    Sear the Salmon: In a large skillet over medium-high heat, heat the olive oil and butter. Once hot, add the salmon fillets skin-side down. Cook for about 4-5 minutes until the skin is crispy, then carefully flip and cook for another 3-4 minutes. Remove salmon from the skillet and set aside.

      Sauté the Mushrooms and Garlic: In the same skillet, add the sliced mushrooms. Sauté for about 5 minutes until they are browned and any released moisture has evaporated. Add the minced garlic and cook for an additional minute until fragrant.

        Make the Cream Sauce: Pour in the chicken or vegetable broth and bring to a simmer. Reduce heat and stir in the heavy cream, dried thyme, and lemon juice. Allow the sauce to simmer for about 3-4 minutes until it thickens slightly.

          Combine: Return the salmon to the skillet, spooning the sauce over the top. Allow it to heat through for about 2 minutes. Adjust seasoning with salt and pepper to taste.
