1 lb beef sirloin, cut into bite-sized cubes

3 tablespoons unsalted butter, divided

4 cloves garlic, minced

1 teaspoon dried thyme

1 teaspoon paprika

Salt and pepper to taste

½ cup heavy cream

¼ cup beef broth

2 tablespoons fresh parsley, chopped (for garnish)

1 lb Yukon Gold potatoes, peeled and diced

½ cup milk

2 tablespoons sour cream

2 tablespoons chives, chopped (for mashed potatoes)

Instructions
 

Prepare the Potatoes: In a large pot, add the diced Yukon Gold potatoes and cover with water. Add a pinch of salt and bring to a boil. Cook until the potatoes are tender, about 15-20 minutes.

    Make the Mashed Potatoes: Drain the potatoes and return them to the pot. Add the milk, sour cream, and chopped chives. Mash until smooth and creamy. Season with salt and pepper to taste. Set aside and keep warm.

      Sear the Steak Bites: In a large skillet, melt 2 tablespoons of butter over medium-high heat. Once melted, add the steak cubes in a single layer. Season with salt, pepper, paprika, and thyme. Sear for about 2-3 minutes until browned on all sides. Remove the steak bites from the skillet and set aside.

        Prepare the Garlic Butter Sauce: In the same skillet, lower the heat to medium, and add the remaining tablespoon of butter. Add the minced garlic and sauté for about 30 seconds until fragrant.

          Create the Sauce: Pour in the beef broth and heavy cream, stirring to combine. Bring the mixture to a gentle simmer and cook for another 2-3 minutes until the sauce has thickened slightly.

            Combine Steak Bites with Sauce: Return the seared steak bites to the skillet and toss them in the creamy garlic sauce. Cook for an additional 2-3 minutes until the steak is heated through and well coated.
