1 pound potato gnocchi

8 ounces chorizo sausage, casing removed and crumbled

1 medium onion, finely chopped

2 cloves garlic, minced

1 cup heavy cream

1 cup vegetable broth

1 cup spinach (fresh or frozen)

1 teaspoon smoked paprika

1/2 teaspoon red pepper flakes (adjust to taste)

Salt and pepper to taste

1/2 cup grated Parmesan cheese

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Cook the Gnocchi: Bring a large pot of salted water to a boil. Add the gnocchi and cook according to package instructions until they float to the top. Drain and set aside.

    Prepare the Chorizo: In a large skillet, heat olive oil over medium heat. Add the crumbled chorizo and cook for about 5-7 minutes, or until browned and cooked through. Use a wooden spoon to break it apart as it cooks.

      Add Aromatics: Add the chopped onion to the skillet and cook until softened, about 3-4 minutes. Then, add the minced garlic and cook for another minute until fragrant.

        Create the Sauce: Pour in the heavy cream and vegetable broth, stirring to combine. Bring the mixture to a gentle simmer. Add in the smoked paprika, red pepper flakes, and season with salt and pepper to taste.

          Incorporate Spinach: If using fresh spinach, add it to the skillet and cook until wilted. If using frozen spinach, thaw and drain any excess water before adding it. Mix well into the sauce.

            Combine Gnocchi: Gently fold the cooked gnocchi into the creamy chorizo mixture. Ensure all the gnocchi are coated in the sauce. Cook for an additional 2-3 minutes until everything is heated through.

              Finish with Cheese: Stir in the grated Parmesan cheese until melted and well combined, adding a little more broth or cream if a thinner consistency is desired.
