Ingredients
  

1 pound gnocchi (store-bought or homemade)

8 oz spicy chorizo, casings removed and crumbled

1 cup heavy cream

1 cup chicken broth

1 cup cherry tomatoes, halved

1 small onion, finely chopped

2 cloves garlic, minced

1 teaspoon smoked paprika

1 cup fresh spinach

Salt and pepper to taste

2 tablespoons olive oil

Fresh basil or parsley for garnish

Grated Parmesan cheese, for serving

Cook the Gnocchi: In a large pot of boiling salted water, cook the gnocchi according to package instructions. Once they float to the top (about 2-3 minutes), remove them with a slotted spoon and set aside.

    Sauté Chorizo: In a large skillet, heat the olive oil over medium heat. Add the crumbled chorizo and cook for about 5-7 minutes, or until browned and crispy.

      Add Vegetables: Stir in the chopped onion and cook for about 3-4 minutes, until softened. Then add the minced garlic and halved cherry tomatoes, cooking for another 2 minutes until the tomatoes begin to burst.

        Make the Sauce: Pour in the heavy cream and chicken broth, stirring to combine. Add the smoked paprika, and season with salt and pepper to taste. Let the mixture simmer for about 5 minutes, allowing it to thicken slightly.

          Combine Ingredients: Add the cooked gnocchi to the skillet, tossing gently to coat them in the creamy sauce. Fold in the fresh spinach and cook for an additional 2-3 minutes, until the spinach has wilted.
