Ingredients

2 chicken breasts, diced

8 ounces (225g) penne pasta

1 can (14 oz) crushed tomatoes

1/2 cup heavy cream

1/3 cup prepared basil pesto

1 medium onion, finely chopped

3 cloves garlic, minced

2 tablespoons olive oil

1 teaspoon dried oregano

Salt and pepper to taste

Fresh basil leaves for garnish

Grated Parmesan cheese for serving

Instructions

Cook the Pasta: In a large pot, boil water and add a generous pinch of salt. Cook the penne pasta according to package instructions until al dente. Drain and set aside.

Cook the Chicken: In a large skillet, heat olive oil over medium heat. Add the diced chicken breasts and season with salt, pepper, and oregano. Cook for 6-8 minutes or until the chicken is cooked through and golden brown. Remove the chicken from the skillet and set aside.

Sauté the Aromatics: In the same skillet, add the chopped onion and sauté for about 3 minutes, or until translucent. Add the minced garlic and cook for an additional minute until fragrant.

Create the Sauce: Stir the crushed tomatoes into the skillet with the onions and garlic. Allow the mixture to simmer for about 5 minutes. Next, lower the heat and mix in the heavy cream and basil pesto until fully combined.

Combine Everything: Add the cooked chicken back into the skillet and stir to coat it in the creamy sauce. Gently fold in the cooked penne pasta, mixing until everything is well combined. If the sauce is too thick, you can add a splash of pasta water until you reach your desired consistency.

Serve: Taste and adjust seasoning with salt and pepper if needed. Serve hot, garnished with fresh basil leaves and a generous sprinkle of grated Parmesan cheese.
