2 boneless, skinless chicken breasts, diced

8 oz (225g) fettuccine or your pasta of choice

2 tablespoons olive oil

4 cloves garlic, minced

1 cup heavy cream

1 cup chicken broth

1/2 cup grated Parmesan cheese

1/4 cup fresh basil, chopped (or 1 tablespoon dried basil)

1 teaspoon oregano

Salt and pepper to taste

Optional: Red pepper flakes for a kick

Fresh parsley for garnish

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside.

    Sauté Chicken: In a large skillet, heat olive oil over medium-high heat. Add the diced chicken and season with salt and pepper. Sauté until the chicken is cooked through and golden brown (about 5-7 minutes). Remove the chicken from the skillet and set aside.

      Sauté Garlic: In the same skillet, reduce the heat to medium and add the minced garlic. Sauté for about 1 minute until fragrant, being careful not to burn the garlic.

        Make the Sauce: Pour in the chicken broth, scraping any browned bits from the bottom of the skillet. Allow it to simmer for 2-3 minutes. Then, stir in the heavy cream and bring to a gentle simmer.

          Add Cheese and Herbs: Stir in the Parmesan cheese, chopped basil, oregano, and adjust seasoning with salt and pepper. If you like some heat, add red pepper flakes to taste.

            Combine: Add the cooked chicken back into the skillet, followed by the drained pasta. Toss everything together until the pasta is well coated in the creamy sauce. If the sauce is too thick, you can add a splash of pasta water to reach your desired consistency.

              Serve: Plate the creamy chicken pasta in bowls or on plates, garnishing with fresh parsley and an extra sprinkle of Parmesan cheese if desired.
