Creamy Chicken and Gnocchi

2 tablespoons olive oil

1 pound boneless, skinless chicken breast, diced

1 small onion, diced

3 cloves garlic, minced

2 cups fresh spinach

1 teaspoon dried thyme

1 teaspoon dried oregano

1 cup chicken broth

1 cup heavy cream

1 package (about 16 oz) potato gnocchi

1 cup cherry tomatoes, halved

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

In a large skillet, heat the olive oil over medium heat. Add the diced chicken, season with salt and pepper, and cook until the chicken is golden brown and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.

    In the same skillet, add the diced onion and sauté for about 2-3 minutes until translucent. Stir in the minced garlic and cook for an additional 1 minute until fragrant.

      Add the spinach, thyme, and oregano, stirring until the spinach wilts down.

        Pour in the chicken broth and bring the mixture to a simmer. Lower the heat and stir in the heavy cream, mixing well.

          Meanwhile, in a separate pot, bring water to a boil and cook the gnocchi according to package instructions. This should take about 2-3 minutes; gnocchi are done when they float to the top. Drain and set aside.

            Add the cooked chicken and halved cherry tomatoes to the creamy sauce, stirring to combine. Cook for 2-3 minutes until everything is heated through.

              Gently fold in the gnocchi, allowing them to absorb some of the creamy sauce. Adjust seasoning with more salt and pepper if needed.

                Remove from heat and let the dish sit for a minute before serving.
