Creamy Chicken and Bacon Pasta

300g pasta (fettuccine or penne works great)

2 chicken breasts, diced

6 strips of bacon, chopped

2 cups heavy cream

1 cup chicken broth

1 cup grated Parmesan cheese

3 cloves garlic, minced

1 teaspoon Italian seasoning

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

2 tablespoons olive oil

Instructions
 

In a large pot of salted boiling water, cook the pasta according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain and set aside.

    While the pasta is cooking, heat the olive oil in a large skillet over medium heat. Add the chopped bacon and cook until crispy. Remove the bacon from the pan and set aside, leaving the rendered fat in the skillet.

      In the same skillet, add the diced chicken and cook until golden brown and cooked through, about 5-7 minutes. Season with salt, pepper, and Italian seasoning. Remove the chicken from the skillet and set aside.

        In the same skillet, add the minced garlic and sauté for about 1 minute until fragrant. Be careful not to burn the garlic.

          Pour in the chicken broth and scrape the bottom of the pan to loosen any browned bits. Let it simmer for 2-3 minutes.

            Lower the heat and stir in the heavy cream, bringing the mixture to a gentle simmer. Gradually mix in the grated Parmesan cheese until melted and the sauce is creamy.

              Add the cooked pasta, chicken, and crispy bacon to the skillet, tossing to combine everything well. If the sauce is too thick, add some reserved pasta water, a little at a time, until the desired consistency is reached.

                Taste and adjust seasoning with salt and pepper if needed.

                  Remove from heat, garnish with freshly chopped parsley, and serve immediately.
