Creamy Cajun Pasta with Succulent Shrimp and Spicy Sausage

8 oz fettuccine or penne pasta

1 lb large shrimp, peeled and deveined

1/2 lb spicy Andouille sausage, sliced

1 medium onion, diced

3 cloves garlic, minced

1 red bell pepper, chopped

1 cup heavy cream

1 cup chicken broth

1 tablespoon Cajun seasoning

1 teaspoon smoked paprika

1/2 teaspoon cayenne pepper (adjust to taste)

Salt and black pepper, to taste

2 tablespoons olive oil

1 tablespoon butter

1 cup grated Parmesan cheese

Fresh parsley, chopped (for garnish)

Cook the Pasta: In a large pot of salted boiling water, cook the fettuccine or penne according to the package instructions until al dente. Drain and set aside.

    Sauté the Sausage: In a large skillet over medium heat, add olive oil. Once hot, add the sliced Andouille sausage and cook until browned and slightly crispy (about 5-7 minutes). Remove the sausage from the skillet and set aside.

      Sauté the Veggies: In the same skillet, add the butter. Add the diced onion, minced garlic, and chopped bell pepper. Sauté for about 4-5 minutes, or until the onion becomes translucent and the bell pepper softens.

        Cook the Shrimp: Add the shrimp to the skillet, cooking for about 2-3 minutes until they turn pink and opaque. Be careful not to overcook them.

          Create the Sauce: Pour in the chicken broth and bring it to a simmer. Stir in the heavy cream, Cajun seasoning, smoked paprika, cayenne pepper, and season with salt and black pepper. Allow the sauce to simmer for about 5-7 minutes, stirring occasionally, until it thickens slightly.

            Combine Everything: Add the cooked pasta, sautéed sausage, and grated Parmesan cheese to the skillet. Toss everything together until the pasta is well-coated with the creamy sauce.
