2 boneless, skinless chicken breasts

2 tablespoons Cajun seasoning

1 tablespoon olive oil

8 oz fettuccine pasta

1 tablespoon butter

1 small onion, diced

3 cloves garlic, minced

1 red bell pepper, sliced

1 cup heavy cream

1 cup chicken broth

1 cup cherry tomatoes, halved

1/2 cup grated Parmesan cheese

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Chicken: Season the chicken breasts with Cajun seasoning, ensuring they are fully coated.

    Cook the Pasta: In a large pot of salted boiling water, cook the fettuccine according to package instructions until al dente. Drain and set aside.

      Sauté the Chicken: In a large skillet over medium heat, add the olive oil. Once hot, add the seasoned chicken breasts. Cook for about 5-7 minutes per side or until cooked through (internal temperature should reach 165°F). Remove from skillet and let rest, then slice into strips.

        Make the Cream Sauce: In the same skillet, add butter and onion. Sauté for 2-3 minutes until the onion is translucent. Add garlic and red bell pepper, cooking for another 2-3 minutes until softened.

          Combine Ingredients: Stir in the heavy cream and chicken broth, bringing to a gentle simmer. Add the cherry tomatoes and allow the sauce to thicken, about 5 minutes.

            Finish the Sauce: Stir in the grated Parmesan cheese, and season with salt and pepper to taste.

              Toss It All Together: Add the cooked fettuccine and sliced chicken into the sauce. Toss everything together to ensure the pasta is well coated in the creamy Cajun sauce.
