1 lb beef sirloin, thinly sliced

2 tbsp olive oil

1 medium onion, finely chopped

2 cloves garlic, minced

8 oz mushrooms, sliced

1 cup beef broth

1 tbsp Worcestershire sauce

1 cup sour cream

1 tbsp Dijon mustard

1 tsp paprika

Salt and pepper, to taste

12 oz egg noodles

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Egg Noodles: In a large pot of salted boiling water, cook the egg noodles according to package instructions until al dente. Drain and set aside.

    Sear the Beef: In a large skillet over medium-high heat, heat the olive oil. Add the sliced beef in batches, searing until browned on the outside (about 3-4 minutes per batch). Remove the beef from the skillet and set aside.

      Sauté Vegetables: In the same skillet, add the chopped onion and cook until softened (about 3 minutes). Add the minced garlic and sliced mushrooms, cooking until the mushrooms are tender and any liquid has evaporated.

        Combine Ingredients: Pour in the beef broth and Worcestershire sauce, scraping up any browned bits from the bottom of the pan. Bring to a simmer and return the seared beef to the skillet.

          Make it Creamy: Lower the heat to medium-low and stir in the sour cream, Dijon mustard, and paprika, mixing well. Allow to simmer for 5 minutes until heated through, but do not let it boil. Season with salt and pepper to taste.

            Toss with Noodles: Add the cooked egg noodles to the skillet, gently tossing to combine everything evenly. Cook for an additional minute to warm the noodles through.

              Serve: Garnish with freshly chopped parsley and serve hot, enjoy your creamy beef stroganoff!
