4 cups fresh or frozen corn kernels

1 cup heavy cream or coconut milk for a dairy-free option

2 tablespoons unsalted butter or olive oil

1 small onion, finely chopped

2 cloves garlic, minced

1 jalapeño, finely diced (seeds removed for less heat)

1 teaspoon smoked paprika

1 teaspoon sugar

Salt and pepper to taste

1/4 cup fresh cilantro, chopped (for garnish)

1/4 cup grated Parmesan cheese (optional for a cheesy flavor)

Instructions
 

In a large skillet, melt the butter (or heat the olive oil) over medium heat. Add the onion and sauté until translucent, about 3-4 minutes.

    Add the minced garlic and jalapeño, cooking for an additional 1-2 minutes until fragrant.

      Stir in the corn kernels, smoked paprika, and sugar. Season with salt and pepper. Cook for about 5 minutes, stirring occasionally until the corn is heated through.

        Pour in the heavy cream (or coconut milk) and bring to a gentle simmer. Allow it to cook for about 5-7 minutes, stirring often, until the mixture thickens slightly.

          If using, stir in the grated Parmesan cheese until melted and well combined.

            Adjust seasoning with more salt and pepper if needed. Remove from heat and fold in the fresh cilantro, reserving some for garnish.

              Serve hot, garnished with extra cilantro on top.
