4 large russet potatoes

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

1 cup shredded cheddar cheese

1 cup sour cream

1 cup cooked bacon bits (or crispy chickpeas for a vegetarian option)

1 cup diced green onions

1 cup steamed broccoli florets

1/2 cup diced tomatoes

1/2 cup jalapeño slices (fresh or pickled)

Optional: drizzle of ranch dressing or hot sauce

Instructions
 

Preheat the oven to 425°F (220°C).

    Scrub the potatoes thoroughly under running water, then dry them with a towel.

      Prick each potato several times with a fork, then rub them with olive oil, garlic powder, onion powder, and season with salt and pepper.

        Place the potatoes directly on the oven rack or on a baking sheet for easier cleanup. Bake for 45-60 minutes until the skin is crispy and a fork easily pierces through the flesh.

          While the potatoes are baking, prepare your toppings by cooking bacon until crispy (or roast chickpeas for a vegetarian option), steaming broccoli, and chopping green onions and tomatoes.

            Once the potatoes are done, remove them from the oven and let them cool for a few minutes. Cut a slit down the center of each potato and gently squeeze the ends to fluff the inside.

              Set up a DIY baked potato bar by arranging the potatoes alongside all your toppings in small bowls (cheese, sour cream, bacon bits, green onions, broccoli, tomatoes, jalapeños, and optional ranch dressing or hot sauce).
