1 can black beans, rinsed and drained

1 can corn, rinsed and drained

1 red bell pepper, diced

1 green bell pepper, diced

1 jalapeño, diced (seeds removed for less heat)

1 small red onion, finely chopped

1 avocado, diced

1 cup cherry tomatoes, halved

1/4 cup fresh cilantro, chopped

Juice of 2 limes

3 tablespoons olive oil

1 teaspoon cumin

Salt and pepper to taste

Instructions
 

In a large mixing bowl, combine the black beans, corn, diced red and green bell peppers, jalapeño, red onion, and cherry tomatoes.

    Gently fold in the diced avocado and chopped cilantro, being careful not to mash the avocado.

      In a small bowl, whisk together the lime juice, olive oil, cumin, salt, and pepper until well combined.

        Pour the lime dressing over the mixed ingredients in the large bowl.

          Toss everything gently until well coated in the dressing, ensuring all components are evenly distributed.

            Cover the bowl with plastic wrap and let it chill in the refrigerator for at least 30 minutes to allow the flavors to meld.

              Taste and adjust the seasoning if necessary, adding more lime juice or salt as desired before serving.
